Gingerbread Cake Recipe


This is my absolute favourite cake to bake but especially at Christmas time. It has all the festive spices and is a delicious wee treat. 

Ingredients 
125g Butter, Softened
2/3C Golden Syrup
2 Eggs
2 1/4C Flour
2/3C Brown Sugar
1TBSP Ground Ginger
1TSP Ground Cinnamon
1TSP Mixed Spice
1TSP Baking Soda
2/3C Hot Water
Pinch Of Salt

Method
  1. Mixed softened butter, eggs, golden syrup and brown sugar with an electric blender until pale & creamy.
  2. Sift flour, baking soda, spices & salt into mixture. Reduce speed & mix to combine dry & wet ingredients. Then add hot water & mix enough to combine. Mixture will be reasonably wet but this is okay!
  3. Cook at 200 degrees for 40 minutes or until skewer comes out clean.
